INGREDIENTS:

  • 100g minced flax seed
  • 80 g finely ground almonds (almond flour)
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 80 ml melted butter
  • 2 eggs
  • 120 ml milk (soy milk if you prefer)
  • 100 g brown sugar or coconut sugar
  • 100 g frozen berry fruit

METHOD:

  1. In a large bowl, mix together the minced flaxseed and almond flour.
  2. Add sugar, baking powder and cinnamon.
  3. Mix well.
  4. Add the eggs, butter and soy milk.
  5. Mix well.
  6. Add the frozen berry fruit.
  7. Mix well
  8. Transfer the mixture into a well-coated muffin mold and bake in a preheated oven at 180 degrees for about 30 minutes.
